Bonjour à tous! It’s been a blistery chilly, windy and very rainy winter since we arrived in Normandy. I am told that is to be expected. So I decided to make something yummy that is perfect for this kind of weather- Soupe l’oignon.
As promised, I am coming to you via video from my tiny cottage kitchenette with this recipe. Hope you enjoy!

Soupe l’oignon
4 yellow onions thinly sliced
4 Tbsp of salted butter (French butter if you can get it)
1 L of beef stock (about 4.25 cups)
1 Tbsp of all purpose flour
1/2 cup of white wine
baguette slices
cheese for melting like a gruyere, emmental, raclette (1/4 c per serving)
salt & pepper for seasoning
